Zucc gratin 5This recipe came from a NZ friend, where interestingly they call them courgettes, while in Australia they are zucchinis.



Thinly slice 500 gm courgettes (actually however many you need to feed the number of people you are feeding and whether you are serving this dish as a sole vegetable or with others) and place a layer in a greased ovenproof dish.

Sprinkle with grated parmesan cheese, pepper and salt.

Add another layer of courgettes, cover with cheese and seasonings and continue until all the courgettes are used up.
Dot some butter on top.

Bake in a moderate oven until the courgettes are just cooked. Cooking time depends on the shape and size of the dish and how many courgettes you have used, but it’s usually about 30 minutes.

Good as an accompaniment to barbecues or even with a roast.
